Black Bean Breakfast Burrito

This recipe is easy and can be made in under 10 minutes. It also uses black beans, which are a great under-utilized source of protein and fiber.

No cooking skills required here, you can scramble the eggs in the microwave.

Main Ingredients:

  • 2 whole wheat wraps (large)
  • 4 full size eggs
  • 1/4 cup milk
  • 1/4 cup (25g) shredded cheddar cheese
  • 1/4 cup black beans (washed and drained)

Optional extras:

  • diced tomato
  • chopped green onions
