Hearty Spicy Sweet Potato Chili
This recipe takes a little longer to make, but it’s great for making many meals at once to then use later; it stores well too. The below recipe will make 5 good size servings.
You can also get creative with the chili portion of this recipe. Add more, or less, vegetables and spices to your taste preferences.

The below is the ingredients necessary for batch cooking to make 5 servings
- 2 medium sweet potatoes (medium = the size of 2 apples, most Sweet Potatoes are massive these days). 2 medium sweet potatoes works out to around 7 1/2 cups when chopped into dice size pieces
- 750 g lean ground beef
- 1 small can (156 ml) Tomato paste
- 1/2 cup Salsa
- 1/2 can (540 ml) of corn, drained
- 1/2 can (540 ml) of black beans, drained
- 100g (1 cup) shredded cheddar cheese
- 1 Tbsp lime juice
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika

Recipe notes:
- When you are initially putting the sweet potatoes on the baking sheet it might look like there isn’t enough room. The potatoes will shrink, so don’t worry – smush them together.
- It’s easy to use more than 1 cup of cheddar cheese so be mindful of this is you’re trying to keep this recipe lower in calories.
- Ways to reduce the calories in this recipe: use 3/4 to 1/2 of the cheese (or don’t use any at all? But…that would be less fun), use a leaner meat option (chicken, turkey), increase amount of black beans and corn while reducing amount of sweet potato and/or lean ground beef.
