Simple Scrambled Eggs

A good recipe to make for a quick and simple healthy breakfast during the week. Can be up-scaled for more people just keep the ratio’s outlined below the same (2 eggs: 1/4 cup vegetables: 1/4 cup meat: 1/4 cup milk). Given the vagueness of “vegetables” and “meat” this recipe can be adapted to include a lot of different ingredients and taste profiles.

Prep time:  5 mins  I  Cook time: 5 mins I Total time: 10 mins  I Makes 1 serving

Main Ingredients:

  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup vegetables (I usually use bell peppers, green onions, celery, or a combination of these vegetables)
  • 70 g meat (eg. 2 slices of ham 1/4 cup chopped up)

326 Calories | 28g Protein| 21g Fat | 9g Carbs

*Based on 70g for deli ham and 1/4 cup (45g) yellow bell peppers.
